ABC Club Sandwich

Serves 4

Total time: 20 minutes


Ingredients:

2 15-oz cans white beans, rinsed and drained

2 tablespoons extra-virgin olive oil

1⁄2 teaspoon salt

1⁄4 teaspoon black pepper

8 slices whole wheat bread

1⁄2 red onion, thinly sliced

1 cucumber, thinly sliced

2 cups spinach

2 avocados, pitted and thinly sliced


Directions:

1. Combine beans, oil, salt, and pepper in a medium bowl and roughly mash with back of a fork.

2. Place bread on work surface and divide bean mixture among them. Top with onion, cucumber, spinach and avocado.

3. Stack with remaining slices of bread to make sandwiches, slice in half and serve.
